San Cassiano Valpolicella Ripasso Superiore DOC is an extraordinary wine created by managing the skins left over from the production of Amarone wine. Fresh from the fermentation of Amarone, the spent skins are added to Valpolicella wine and macerated for several days. Re-fermentation takes place, whereby the wine strengthens its structure, raises its alcohol content and increases its aroma. After this process, it continues to mature for a full year in barrel and another six months in bottle.
These treatments make Ripasso a powerful, clear, fresh, full-bodied wine. It has an evolving, not too strong aroma, at first spicy and gingerbread, coffee, then cherry and liqueur. Very smooth in the mouth, even silky, with some bitterness and tannin. The finish is somewhat leathery and tobacco-like, with nice stone notes. Worthy of main courses, preferably with roasted meat.
