The soils found in the Loire Valley are unique and therefore produce wines that cannot be imitated in any other part of the world. The Pouilly Fume appellation produces almost legendary Sauvignon Blanc wines. The smoke in the name of this wine accurately reflects its character, as it is characterized by an intriguing flint flavor. Lime and flint soil rich in marl is responsible for this unique taste. Domaine Chauveau’s organic Pouilly Fume is bright, fruity and refreshing, quite ascetic in style. The nose vibrates with aromas of lime and green apple supported by mineral notes, including that distinctive smoky flint. In the mouth, sharp mineral flavors with a moderately long, clean finish. Great with light seafood, especially raw oysters and shellfish. It also pairs very well with rice dishes with chicken or other tender meat.
